Trippa alla Pisana - Tripe Pisa style
Trippa alla Pisana
This is the speciality of Sergio's restaurant in Pisa. Tripe is a delicacy, for connoisseurs.
Ingredients for 4 people
500g of tripe
50g of pig bacon
1 mature tomato
1 onion
1 carrot
3 sticks of celery
1 sprigg of parsley
2 cloves of garlic
3 teaspoons of olive oil
A tablespoon of dry white wine, rosemary, sage, thyme, origano and salt e pepper.
Dice the onion, carrot, celery and fry them in oil. Join the tripe, the bacon and the peeled tomato and free the tomato of its seeds and chop it up. Soak it with wine, and add the sage, thyme, origano and rosemary and chop up the parsley. Add salt and pepper. Cook in a copper pot on a low heat in boiling water. Serve with fried bread to get the true taste.
