Pappa di Zucchini - Tuscan cooking - Lucca
Pappa di Zucchini
Ingredients for 4 people
500g of courgettes with flowers
2 Onions
4 Tablespoon of Olive Oil
3/4 of vegetable stock
Salt and Pepper
Cut up the courgette and put salt on it so that it retains its full green colour, put them in the pan with the chopped up onion and add a little pepper. Add the flowers stems and leave them to flavour for a few minutes, then pour in the stock and put them back on the fire. The courgette should only take a few minutes to cook. Serve it all together with a little olive oil.
