Minestra piscialletto
Called "piscialletto" from Montepulciano, the yellow flower of tarassaco, a duretic herb which is found in the long streets of the countryside.
Ingredients for 4 people
250g of piscialletto leaves
2 cloves of garlic
1 leek
1 stick of celery
Olives
Salt and pepper
Get a frying pan. Chop up the leek, celery and garlic. Place it on the heat and then add the piscialletto leafs. Cook for 6 minutes, in boiling water and with salt and pepper. Cook for a further 30 minutes and then place it all in the blender.
